For many, spring not only means warmer weather and longer days, but also suffering from springtime allergies. Are you an allergy sufferer dreading this allergy season? Do you have common allergy symptoms like runny nose, sneezing, itchy-watery eyes, wheezing, and tickly throat?
I used to have all of those symptoms, but am now able to remain allergy-free throughout the season. You would think that allergies can only get worse, but my life-long allergies got better over time using primarily natural remedies. Grain-Free Italian Style Waffles at your service!

This waffle recipe originally comes from my friend Kathy Sheehan over at Diabetics Rejoice (link below)
I did make some adjustments because I didn't have all the ingredients she had. So with her permission, I am posting my recipe.
Italian Style Grain-Free Waffle
1 cp almond meal
1 large egg
4 TBS milk (I used whole, grass fed milk)
1 TBS apple cider vinegar
1/4 tsp salt
1/2 tsp baking soda
1/2 TBS Italian seasoning
1/2 tsp garlic powder
Mix all ingredients in a bowl until thoroughly mixed. It will be the consistency of pancake batter. If it's too thick, add a little more milk until you get a runnier consistency for the waffle iron.
Using a hot waffle iron, spray both sides with non-stick spray or ghee, (I used grapeseed oil spray), and pour batter onto the iron. Close the cover and cook until the ready light comes on. Remove and serve immediately with dinner. May be stored in the refrigerator in an air-tight container.
This will make 4-6 waffles. Serving suggestions: As a dinner bread, as a sandwich with chicken salad, as croutons for your salad if left out to dry, as an appetizer with dipping oil or marinara sauce.
Have fun with this recipe! It can be altered in so many ways. I even made a version with chopped kale!

Nutrition is very important for everyone, but it is especially important for children because it is directly linked to all aspects of their growth and development; factors which will have direct ties to their level of health as adults. For example, a child with the right balance of omega fatty acids in their daily diet has a much better chance at creating a more solid foundation for their brain activity and capabilities later on. Likewise, a child who practices a whole foods diet paired with a good amount of exercise and outdoor activities on a daily basis, significantly improves their chances of preventing chronic diseases, even if these tend to be hereditary within your family.
Unfortunately, the standard American diet (S.A.D.) is very worrisome. All too many children are allowed to over indulge in fast food foods and junk food snacks. There’s a dire need to reinstall basic values, and the very simple to understand food pyramid plate still provides an excellent place to begin educating children about healthy foods and quantities. Fortunately, it doesn’t have to be difficult for children to start recognizing foods that are good for them. It’s always a good idea to start with very simple examples that they can remember. A child’s diet should always be supplemented with plenty of exercise and outdoor activities.
Above all, you’ve got to think of ways to make it fun for children to eat healthy. They need fun injected into eating right in order for them to practice healthy eating even while you’re not standing over their shoulders. You can also try pairing this fun element with an informational angle as well. If you provide information regarding serious issues such as heart disease and diabetes, then you will give them even more reason to follow healthy eating habits.
You will also help promote a better quality of life if you instill proper nutrition trends in your children. It will allow them to partake in more activities and with greater enjoyment. People with high levels of health also consistently report that they enjoy elevated feelings of wellness and wellbeing. As part of this, children are also able to fight off colds with improved efficiency with the support of proper nutrition. And this brings up a vital point in communication with your children: You should always be on the lookout for different ways to make solid connections for your children. You can picture it in your mind like a web diagram, connecting major points with a line for your children to better understand issues. If you actually explain to your child that they won’t have to suffer through those nasty colds nearly as much if they maintain healthy diet.
Provide children with the right nutrition now and they will learn at an early age what’s necessary for good health. This will also help to set them up for a life of proper eating and nutrition, almost certainly helping them to live longer. Countless studies show that what someone learns as a child is then perpetuated throughout their life. Teach them healthy eating habits now and you’ll perpetuate a healthy lifestyle for them and put them on autopilot on their way to lasting wellness.
